There is an old world style of cooking that has been all but lost in these modern times, but it is making a resurgence. Canning, curing and smoking foods to preserve them for the colder season used to be a necessity, especially in regions like ours with very short growing seasons. Drying local wild mushrooms, curing and smoking bacon and sausages, making pickles and sauerkraut, canning our own tomatoes, and making hot sauces, mustard and ketchup allows us to enjoy these great local products year round. It also gives us a great amount of pride in the food we cook and put on your table because we know where it came from and what went into making it.
